Your kitchen might be spotless, but guests only see the front of house. A sticky table, smeared glass or crumb-covered chair can undo a great meal. Here's a simple routine for restaurants, cafés and bars.
Between every guest
- Clear and wipe the table with a dedicated, clean cloth and a food-safe cleaner.
- Check chair seats and wipe off crumbs.
- Wipe menus, salt and pepper shakers and condiment bottles.
- Restock serviettes.
Before opening
- Polish glasses and cutlery.
- Wipe down counters, card machines and door handles.
- Sweep and mop dining floors.
- Check the washrooms. Guests always do!
Pro tips
- Two-cloth system: one for wiping, one for drying, so tables are never left wet.
- Colour-code cloths: front of house separate from kitchen and washrooms.
- Hand sanitiser at the entrance and the till builds guest confidence.
- Wash cloths daily on a hot cycle.
